Ginger Molasses Cookies

For me, holiday season = cookie season. When I am around cookies, I cannot resist. This recipe is a lovely holiday treat that is not too sweet. I love gingerbread ALWAYS, but especially during the holiday season. These are chewy, delicious and are naturally gluten free and can be made dairy free. I love love these cookies and I am sure that these will be a crowd pleaser for everyone in the family!

2 cups of flour (use GF oat flour if you’d like to make them gluten free)
2 teaspoons baking powder
1 teaspoon baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
1/4 cup coconut sugar
6 tablespoons of melted butter or coconut oil
3 tablespoons of fresh grated ginger (or 1 tablespoon ground ginger)
2 tablespoons of milk or milk alternative
1 teaspoon vanilla extract
1/4 cup molasses

  1. Preheat your oven to 350F

  2. Line a baking sheet with parchment paper or grease properly

  3. In a small bowl combine the dry ingredients - flour, baking powder, baking soda, cinnamon and salt

  4. Whisk together until combined

  5. In another medium bowl, combine the wet ingredients - coconut sugar, melted butter, ginger, milk, vanilla and molasses and mix until combined

  6. Slowly add the dry ingredients to the wet ingredients and stir until combined

  7. Cover and chill for ten minutes

  8. When ready, you can use a rolling pin and roll out the dough and then cut out shapes with a cookie cutter or you can roll the dough into one inch balls and flatten with a fork like I did for the ones pictured.

  9. Bake for 8 minutes and once cooled enjoy with warm tea, milk or a hot toddy!
