10 Minute Meal - Simple Soba Noodles

I am a big fan of 10-minute meals, especially after a long day. Below is one of my favorite go-to quick meal. 

What you'll need: 
- 1 package of soba noodles
- rice vinegar
- sesame oil
- tamari
- 12 brussels sprouts, halved
- 9 shiitake mushrooms, sliced
- 1 tablespoon coconut oil
*Veggie amounts are for 3 servings

What to do:

  1. Cook your soba noodles according to the packaging instructions 
  2. In the meantime, sauté the shiitake mushrooms and Brussels sprouts in coconut oil over medium heat and season with salt (about 7 minutes) 
  3. Once the noodles are ready, rinse them under cold water to prevent sticking and transfer to a bowl 
  4. Drizzle a small amount of rice vinegar, sesame oil and tamari over the noodles and mix until combined - taste to adjust flavor as needed
  5. Serve sautéed veggies over noodles and sprinkle with sesame seeds to garnish. 

*you can always swap out the veggies for alternatives. To get a bit fancy, you could also add some shredded raw veggies as well as sliced scallions or even top with a fried egg or any other protein! I also added some kimchee to mine :)
