Bye Bye Summer, Hello Fall!

It is harvest season and the local markets are bursting with all of the best veggies!

After a long relaxing summer, fall has come to kick us back into gear. I sometimes find it hard to make the transition from summer to fall. Going from relaxing weekends away at the beach and much more open schedule to weekends in the city and a JAM PACKED work schedule that often bleeds into the weekends. Are you with me?

Though fall has just started, it has been filled with work, seeing friends and lots of celebrations. Even though these are all good things, being in that go mode can get tiring. One way I like to stay on track is by meal planning and prepping.

OK, wait… you just said fall is SO busy, how could you manage to meal prep and plan for yourself? I am here to let you know that even in the busiest seasson, it is possible to stay on track and I am LIVING PROOF.

I have been preparing most of my meals for the past five years. This is all while being a premed student with a rigorous course load AND working AND volunteering and then transitioning to working full time in clinical research with early morning meetings and long days on my feet.

Though my professional life has changed quite a bit over the years, I have never compromised what I put in my body because I know that like good fuel, good food would help fuel my body and brain to be the best version of myself!

I know that I always feel better when I am cooking for myself and eating my own food and I am sure that you do too. I created the Fall Meal Plan for so many reasons: for my friends and co-workers who would stare enviously at my color filled packed lunch containers, for those busy parents that feel like they can’t catch a minute and especially, and most importantly, for YOU! 

Once you get cooking with me in the Fall Meal Plan, you'll see that meal prep and planning doesn't have to be a whole big thing... I often spend 15-20 minutes on my meals and have leftovers for lunch the next day and then some. In Nonna Gaby's Fall Meal Plan I will teach you my tried and true tricks and recipes that are super simple and delicious. 

You will learn how to cook efficiently, and as a result you'll be eating more healthy, whole foods (because YOU will be making it) and ultimately you will feel amazing! And let's be real, we don't have time to be feeling less than great in the Fall because there is just so much to be done! These recipes are foolproof (I am a huge fool and I created them) so even if you make a mistake or adjustment, they will still taste great!

What is Nonna Gaby's Fall Meal Plan?
