Warmer Weather Here We Come!
Spring marks the start of so many new and exciting veggies popping back in to say hello after a long winter. I don’t know about you, but I sure am excited for the warmer weather!
After a very long winter (so it felt for me), the sun has started peaking out and everything seems to have bloomed overnight. Even though summer and spring can feel like they may be all fun and games. It can be hard for some to make the transition into the warmer months. Going from working long hours because it’s too cold to do anything, to having more time (and sun) to go out with friends at night and on the weekends. I know many struggle with balancing going out and cooking nourishing food that keeps us light and energized.
Though Spring has started a while ago, we also have a full summer ahead of us! Even though I love my weekends away and going out to eat, I do start to feel like I am in a bit of a slump when I don’t have enough nourishing home cooked meals. One way I like to stay on track is by meal planning and prepping.
I am here to let you know that even in the seasons when all you want to do is be outside, it is possible to stay on track with meal prepping, and it doesn’t have to take up your whole Sunday. Trust me, I am LIVING PROOF.
I have been preparing most of my meals for the past six years. This is all while being a premed student with a rigorous course load AND working AND volunteering and then transitioning to working full time in clinical setting with early morning meetings and long days on my feet.
Though my professional life has changed quite a bit over the years, I have never compromised what I put in my body because I know that like good fuel, good food would help fuel my body and brain to be the best version of myself!

I know that I always feel better when I am cooking for myself and eating my own food and I am sure that you do too.
