coconut granola bites
Looking for an easy holiday gift that still feels special? These coconut date truffles are no-bake, nourishing, and genuinely delicious. Wrap them up in a small box with a bow and you’ve got a sweet, thoughtful gift using things you probably already have in your pantry!
INGREDIENTS
1½ cups Medjool dates, pitted
¼ cup peanut butter (alternative nut butters work too)
¼ cup pumpkin seeds
2 tablespoons hemp seeds
¼ cup rolled oats
2 tablespoons chia seeds
2 tablespoons sesame seeds
Unsweetened shredded coconut, for rolling
DIRECTIONS:
Add the 1½ cups dates, ¼ cup peanut butter , and ¼ cup pumpkin seeds to a food processor and pulse until a thick, sticky paste forms.
Add the date mixture to a large bowl. Add the 2 tablespoons hemp seeds, ¼ cup oats, 2 tablespoons chia seeds and 2 tablespoons sesame seeds. stir until everything is combined.
Scoop the mixture and roll into bite-sized balls.
Roll each truffle in shredded coconut to coat.
Enjoy! These keep in the fridge for about a week.
