Sausage and Pepper frittatas
INGREDIENTS:
2 bell peppers, diced
1 onion, diced
1 cup cooked sausage, crumbled or sliced
1/2 cup cheddar, shredded
8 eggs
Salt and pepper
DIRECTIONS:
Preheat oven to 350°F and lightly grease a muffin tin or line with silicone cups.
In a large pan, cook the diced onion and peppers until soft.
Add the 1 cup sausage and cook until heated through.
Add all the cooked ingredients to a large bowl and stir in the 1/2 cup cheddar cheese, then taste and season with salt and pepper as needed. Can add more cheese if you desire!
Mix in the 8 eggs and add another pinch of salt.
Divide the mixture evenly among the muffin cups.
Bake for about 20 minutes, or until the frittatas are set and slightly golden on top.
Let cool for a few minutes before removing from the tin. Serve warm, or store in the fridge for a quick breakfast later in the week!
